Summer chicory - fennel salad

This combination of chicory, fennel and apple is not just a salad. But the absolute superfood salad for your metabolism.
Chicory has a strong anti-inflammatory effect on your body and fennel stimulates digestion. A healthy digestion also includes a healthy intestine and the apples and nuts take care of that. Apples in particular are one of the best sources of fiber, and with their high levels of inulin, they feed your healthy gut bacteria
Ingredients - For 2
- 6 leaves chicory
- A handful of lamb's lettuce
- 12 thin slices of fennel
- Finely chopped fennel herb
- 2 tablespoons almond slivers (or other nuts) roasted
- Slices from 1/2 apple
- 1 tsp raisins
- Feel free to mix in more lettuce
Dressing
- 3 tsp watercress
- 2 – 4 tsp lemon juice
- 1 tsp mustard
- 2 tsp parsley
- 4 tablespoons olive oil
- Pinch of salt
- Pepper as needed
Preparation
1. put all the ingredients for the dressing in a blender and process until they are smooth. If you want the dressing to be thinner, add a little water until it is thin enough to drizzle over the salad.
2. season as needed.
Mix all the lettuce, shaved vegetables, herbs and croutons, place on a plate and drizzle with the dressing.
